Sourced from smallholder farmers in the Molino Norte region of Matagalpa, Nicaragua at elevations between 900 and 1590 meters.
Yellow and Red Catuai, Catimor, and Parainema varieties grown in clay mineral soils.

Fully washed, fermented for 12–14 hours, then dried on patios and raised beds to support clarity, balance, and natural sweetness.
